The dumpling-centric, Irvine-based eatery will soon have a second location at Bixby Village Plaza Mad Dumplings — the food truck turned brick-and-mortar concept by college friends Fen Yi Chen and Edwin Lee — will debut its second outpost at 5760 E 7th St, Long Beach, CA 90803, in Bixby Village Plaza, right across the street from Cal State University, Long Beach. The duo’s maiden operation hails from Irvine, CA, located on Campus Drive near the acclaimed university. Prior to this, in 2016, Chen and Lee offered their dumplings from a food truck (which still operates today) before Andrew Zimmern of Food Network stumbled upon the concept and helped bolster its popularity.
Mad Dumplings offers an array of stuffed dough balls — a rudimentary description of the more complex dumpling — ranging from The Vintage Dumpling (turkey, mushrooms, Chinese chives, cilantro, and cabbage in handmade dumpling skins) to The Mac Dumpling (house-made mac dusted with Japanese panko crumbs and deep-fried). They also offer rice bowls, tater tots, and student combos which will undoubtedly prove convenient given the incoming locale’s proximity to the school. The outpost will open later this year.
